Random...


Today I made Vanilla Bean Cupcakes with Brown Sugar Cream Cheese frosting (from Joy the Baker)....yum!!! The cupcakes were just your ordinary cupcake...but with the frosting....SO delicious! And...just so the cupcakes weren't so ordinary, I added several drops of red food coloring. Hope my co-workers like them! Here's the recipe if you want to try it!



1 1/2 cups butter, softened
8oz cream cheese, softened
1/4 cup light brown sugar, packed
1 teaspoon vanilla extract
pinch of salt
4-6 cups powdered sugar
2-4 tablespoons milk, depending on desired consistency

Cream the cream cheese in an electric mixer for 1 minute. Scrape down the bowl and add the butter, beating for 1-2 minutes, or until incorporated. Add the brown sugar, pinch of salt and vanilla extract, and beat until incorporated. Turn off mixer and add 2 cups of powdered sugar. Turn the mixer on a low speed so the sugar doesn’t fly out of the bowl. Slowly add more sugar alternately with the milk until you reach your desired consistency

Confessions of a shopaholic...

If you know me, you know how much I love shopping. It may just be my favorite thing to do after eating. Even though I have a surplus of clothes, I still search for more. I cannot stop!!! After going through my closet and counting how many dresses I own, I have come to the conclusion that I must stop.

#1) I don't need more clothes
#2) My checking account is being depleted
#3) My money and time could be put to much better use.

So, inspired by The Uniform Project, I am going to stop shopping until December. All of the money that I budget each month for shopping will be donated to The Akanksha Foundation. The foundation supplies children who are living in the slums of India with financial assistance for educational expenses (i.e. school uniforms).

I am excited to begin donating to such a worthy cause, however....I will have to find the willpower to stop shopping. In the past 2 weeks, I've gone 5 times! Well...good luck to me? Hopefully I will reach my goal of $360 ( the approx. amount of 1 child's school year in India). Good night all!
